Julie Lepore, a new CSA member, shared this recipe with me:
Bring a pot of water to a boil, throw the whole pods in and cook for 3-4 minutes, then take them out and shock them in cold water. Pop the beans out of the pods and shell them into a bowl. Squeeze in some lemon juice and olive oil, grate a garlic clove into the bowl and add fresh chopped parsley, salt and pepper. All of it can be added in whatever amounts/ratios you like. Then just let them sit and soak up some flavor while you cook whatever else you’re making.
